Is there a correlation between adverse effects in humans and exposure to hormonally active agents in food? This book summarizes latest results of an international symposium held by experts. Main topics are the effects of phytoestrogens like Isoflavones, which are present in large amounts in soy beans. Soy beans are very popular and widespread. In the U.S. every third baby is fed on soy–based breast milk substitues. Too little is known about possible adverse effects in Humans when taken over a long period and/or in rather large amounts.

This book discusses biochemical, epidemiological and toxicological aspects and modes of action of phytoestrogens and environmental antiandrogens, PCBs, bisphenols, estrogenic plasticizers and antioxidants. Special attention is paid on the risk assessment and methodology.
