Atrio cumplía, recientemente, tres décadas de vida. Pocos proyectos gastronómicos hay como éste para estudiar la evolución de la Alta Cocina y su fértil relación con la cocina popular en el cambio de siglo. Un proyecto que, desde Cáceres, naturalizó enseguida la lección de algunos magisterios contemporáneos surgidos en distintos lugares de Europa.
Además de la entrañable y lúcida visión de Jose y Toño en torno a su restaurante y a su hotel, donde el cuidado y la atención son esenciales, se suman en estas páginas las voces de tres amigos de la casa: Ferran Adrià, Telmo Rodríguez y Rafael Moneo; es decir, cocina, vino y arquitectura desde un casco histórico que la UNESCO ha reconocido como Patrimonio de la Humanidad.
Atrio recently celebrated its third anniversary. There are very few gastronomic projects like this that allow the study of evolution of fine dining and its fertile relationship with popular cuisine at the turn of the new millennium. This project, from its base in Cáceres, quickly naturalised the lessons learned from a number of contemporary master emerging in different parts of Europe. In addition to Jose and Toño engaging and clearly expressed vision for their restaurant and hotel, where care and attention are intrinsic elements, these pages are also a platform for the voice of three friends of this establishment located in the heart of the old town of Cáceres, a UNESCO World Heritage site: Ferran Adrià, Telmo Rodríguez and Rafael Moneo, voices for cuisine, wine and architecture.
