My Candy Secrets

As much as I had inherited and learned as a child of candy making, it was not enough to save me many trials and sad mis takes when at sixteen I really began to make candies to sell. There was no book to teach me the things I needed to know. I had to learn almost entirely from experience — bitter experience. For a mistake meant loss of materials and time — a loss indeed in those days. Naturally, I learned much through years of trying this and that way, and I know that what I have learned of the hows of candy making will be a great help to those who would like to make candies at home. Therefore, I have written this book; and in doing so I have endeavored, not only in my text but by means of many photographs, to show clearly and concisely the methods of making the various kinds of candies, as I believe this will be far more helpful than a mere collection of recipes. Once the knowl edge of methods is understood, one can make at home as many varieties of candies as one's imagination may inspire.
